Slow Cooker Tomato Bacon Artichoke Chicken

This flavorful chicken and sauce is served over rice, barley, noodles or mashed potatoes and then topped with fresh, diced tomatoes for a little color.  This is a yummy meal to serve a hungry family on any night of the week!

Ingredients

  • 4 Boneless Skinless Chicken Thighs
  • 2 Fresh Tomatoes
  • 14 oz Artichoke Hearts
  • 1/4 Cup Bacon Bits
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Dried Tarragon
  • 1 Tbsp Quick-Cooking Tapioca
  • 1 tsp Chicken Bouillon
  • 1/2 Cup Fresh Grated Parmesan
  • Sea Salt and Pepper

  1. Combine chicken, tomato, artichokes, bacon, garlic powder, onion powder, tarragon, tapioca, and bouillon in slow cooker. Cover and cook on LOW for about 4-6 hours.

  2. Stir and add in Parmesan cheese. Season to taste with salt and pepper and extra seasonings, if needed. Serve over barley, rice, mashed potatoes, or noodles.
