Slow Cooker Chicken Teriyaki Bowls
Topped with tasty teriyaki sauce, this dish is a great way to satisfy the entire family and sneak some veggies into your kids’ diets!
- 4-6 Boneless Skinless Chicken Breasts
- 1 Cup Chicken Broth
- 1/2 Cup Teriyaki Sauce
- 1/3 Cup Brown or Coconut Sugar
- 3 tsp Minced Garlic
- 4 Cups Cooked Rice
- 2 Cups Baby Carrots
- 2 Cups Broccoli Florets
Spray slow cooker with nonstick cooking spray and place chicken inside.
In a small bowl, whisk together chicken broth, teriyaki sauce, brown sugar and garlic. Pour over chicken. Cover and cook on low for 6-8 hours.
Towards the end of the cook time for the chicken, make steamed rice and steam the carrots and broccoli.
Shred chicken in slow cooker once cooked. Add the steamed broccoli and carrots, and toss to combine.
Place cooked rice in individual bowls. Top with chicken, vegetables and extra sauce from slow cooker.
