Ingredients

  • 1 Butternut Squash
  • 1 Cup Uncooked Brown Rice
  • 1 Onion
  • 1/2 Cup Water
  • 3 Cloves Garlic
  • 2 tsp Thyme
  • 1/2 tsp Sea Salt
  • 1/4 tsp Pepper
  • 1 Can Vegetable Broth
  • 6 oz Fresh Baby Spinach

  1. In a slow cooker, combine the first eight ingredients. Stir in broth. Cook, covered, on low 4-5 hours or until grains are tender. Stir in spinach before serving.
