Sausage & Boursin Breakfast (Suitable For Dinner 😉) Crockpot Casserole
I have been making this casserole in various forms for almost two years.
It calls for a cubed bread base, and because of my processed grain allergies, I used Udi's Gluten Free bread for a long time.
However, recently I've switched to a veggie base like fresh or flash frozen broccoli florets or, like tonight, one whole cut up head of cauliflower...yum!
As you can see from the photos, on top of the cauliflower I've layered 1# cooked, all natural breakfast sausage, sauteed onions (2 medium) and Herb & Garlic Allouette Cheese, instead of the Boursin (because I had a coupon). By the way, I also layered in there a little leftover shaved Italian cheese blend so it would get used up! Sometimes I shred fresh baby spinach and layer that too.
The final step of this casserole is to blend eggs or egg whites with parsley, salt, pepper and a little nutmeg in the blender and pour it all over and around the ingredients.
Once that's done, you can put the lid on your crockpot and set it for 5 hours on low, or 3 hours on high.
One final tip would be to allow time at the end for your casserole to rest on warm before you slice and portion it for your meal.
